Arugula
Also called… Rocket, roquette.

Because you know what tastes good… Arugula has a light spicy and peppery flavour; some people even distinguish a hint of hazelnut. Pleasantly surprising in a salad, its unusual flavour makes it an excellent aromatic herb to liven up many dishes.

A natural elegance… Arugula is distinguished by its narrow, serrated and pointed leaves of a delicate green colour.

Good for you… Arugula is higher than other varieties of lettuce in antioxidants such as lutein and beta-carotene, both carotenoids that could stave off of malignant tumours. Also, as arugula is a cruciferous green, it contains isothiocyanates, chemical compounds that could retard the development of certain cancers. Finally, arugula provides a good source of vitamin K and a source of folate.

Arugula Worldwide: Italians love to use arugula in many ways; it is popular in France and becoming more and more so in North America.

Try with… different varieties of baby lettuces. In fact, its peppery flavour adds spice to mescluns such as Spring Mix and, particularly, San Marino Mix.


Gourmets’ Inspirations:

If you like its peppery flavour, arugula is simply delectable in a salad seasoned with garlic, green onions, tomatoes, Parmesan or any other cheese with a relatively sharp flavour. You can also use it to spice a tomato or cucumber salad or even a dish of roasted peppers or smoked fish.

Arugula is also used as a garnish in pizzas, sandwiches, quiches, pastas, etc. Leaves that have begun to wilt may be added to soups or stews.

The Right Dressing for Arugula:

Since arugula is already tasty, you may drizzle it with a sweet or fruity dressing that will season it exquisitely without masking its exceptional flavour. To make your dressing, start with olive oil and choose balsamic, sherry or raspberry vinegar. To your oil and vinegar dressing, you may want to add some herbs of your choice (basil, tarragon, rosemary…) and a tad of honey that will sweeten your salad. Also, why not try a pear dressing by running a pear through the blender and mixing it with olive oil and sherry vinegar.

How to Select Your Arugula : Because arugula is less bitter young, choose fresh baby leaves that are spotless and firm.

How to Store Your Arugula: Keep your arugula refrigerated, inside its clamshell and check the Best Before date printed on the package.

Savour it… year-round (production of Quebec [Canada] and Florida).

Serve…2 to 4 people as a side dish, with a 5-once clamshell.
