Boston Lettuce
Also called… Butterhead, Bibb lettuce

Because you know what tastes good… Deliciously tender, Boston lettuce has a more refined taste than other lettuces. Its subtle flavour is mostly enhanced by a sweet vinaigrette, but it is also delectable garnished with a variety of fresh vegetables and fruits.

A natural elegance… Bright green on the outside and yellow on the inside, Boston’s extremely tender leaves form a non-compact head that looks like an opened rose.

Good for you… Excellent source of vitamin K, Boston lettuce also contains some carotenoids such as lutein and beta-carotene (2000 ?g for 100 g), both antioxidants that could reduce the risks of cancer. Boston lettuce is also a source of folate and vitamin A.

Boston Lettuce Worldwide: Originally from North America, this tender and delicate variety is most appealing to Europeans.

Gourmets’ Inspirations:

Because of its delicateness, Boston lettuce is enhanced by sweet flavours that do not mask its subtle taste and damage its tender leaves. In a salad, do not skimp on refreshing vegetables (celery, bell peppers, tomatoes, cucumbers…) and fruits such as oranges or apples to enhance the taste of your lettuce. Garnish it with nuts, the cheese of your choice, croutons or even seafood or smoked fish. You can also use Boston leaves to add colour and freshness to your sandwiches.

You can serve Boston as a side dish by sautéing it in a pan with some butter, onions and thinly sliced bacon. Furthermore, you may try creating a sauce with your Boston by blanching it with salt, running it through the blender, draining it and mixing it with lemon juice, butter and a shallot.

The Right Dressing for Boston Lettuce:

Simply drizzle a stream of fresh cream or yoghurt seasoned with fresh ground pepper and chive or mint over your Boston salad. If you prefer oil and vinegar dressings, opt for sweet oils such as peanut, canola, hazelnut or sunflower oil. You may also replace vinegar with lemon or lime juice. Otherwise, use (sparingly) cider or raspberry vinegar. Finally, you can add a tad of honey to your mix for a light sweet flavour.

How to Select Your Boston Lettuce: Choose a Boston lettuce with leaves that are fresh, without rot, spotless and of a nice green colour.

How to Store and Prepare Your Boston Lettuce: Boston lettuce can be stored for 3 to 5 days in a perforated plastic bag, inside your refrigerator, as it must breathe or it will rot. A little trick? Do not place your lettuce near fruits that release ethylene such as apples, pears or bananas to avoid premature ripening. Wash your lettuce in cold water and just before preparing it. Dry it immediately before leaves soften. Finally, add dressing only when ready to serve.

Savour it… throughout the summer, from the end of June until the beginning of October (production of Quebec, Canada).
