Baby Spinach

Good for you… Baby spinach is particularly high in antioxidants such as ferulic acid, that helps to prevent some cancers, and lutein and zeaxanthin, that both help to protect eyes against macular degeneration and cataracts. Baby spinach also contains a great deal of betacyanin (192 mg for 1 cup of raw spinach and 613 mg for ½ cup of cooked baby spinach), a chemical compound that decreases the risks of cardiovascular disease. Spinach is an excellent source of vitamin K, vitamin A (good source when raw), folate (good source when raw), manganese (good source when raw), iron (cooked only) and magnesium (cooked only). As you can see, this incredible vegetable is a true health food you cannot go without.

Baby Spinach Worldwide… Cultivated and enjoyed worldwide, spinach is also the main ingredient in Italian Florentine-style dishes.

Try with… different varieties of baby lettuces, in a mesclun such as Spring Mix or San Marino Mix. Baby spinach is also delicious as a salad served with mandarins, clementines, oranges or apples.

Baby spinach can be steamed with butter or used to garnish pasta. You can also serve it with meat or fish dishes. Finally, why not make a delicious cream of spinach soup from baby spinach that has begun to wilt.

The Right Dressing for Baby Spinach:

In a salad, you should not hide the taste of baby spinach. Therefore, you may choose sweet flavours to prepare your dressing. For instance, the traditional mix of olive oil and balsamic vinegar will perfectly season a salad of baby spinach, shallots, and citrus fruits. You can also add some honey to your oil and vinegar dressing or replace your vinegar with lemon or lime juice. Finally, you are not limited to olive oil: baby spinach is also delicious when drizzled with peanut, sunflower, hazelnut, or canola oil.

How to Select Your Baby Spinach: Choose spotless baby spinach of a beautiful dark green colour. Leaves should be crisp, tender and fresh.

How to Store Your Baby Spinach: Keep your baby spinach refrigerated, inside its clamshell and check the Best Before date printed on the package. To freeze your baby spinach, blanch it for two of minutes, press the leaves to drain them and store them in the freezer in a plastic bag.

Savour them… year-round (production of Quebec [Canada] and Florida).

Serve…2 to 4 people as a side dish, with a 5-ounce clamshell and 8 to 10 people with a 1 lb. clamshell.
