Sesame and Mango Dressing for Oriental Mix

Ingredients (For 1 L of Dressing) :

Dressing

  • 500 mL (2 cups) Mango juice
  • 1 slivered shallot
  • 80 mL (1/3 cup) Rice Vinegar
  • 5 mL (1 tsp) Mustard
  • 500 mL (2 cups) Sesame Oil
  • Salt and freshly ground Pepper

Preparation:

  1. Over medium heat, reduce mango juice by half. Add shallot during the cooking.
  2. Once reduced, mix in blender, season with salt and pepper and add vinegar, mustard, drizzling the oil.
  3. Adjust seasoning accordingly.
  4. Store in refrigerator.

*** It is possible to replace half the Sesame oil with vegetable oil if your particular oil is very fragrant.
