Oil and Vinegar Dressings – what to know about them...

Choosing the right oil and vinegar dressing is important. Spring mix, romaine, leaf lettuce, endive, Boston… Each variety has its own flavour and thus deserves an oil and vinegar dressing that will enhance its original taste rather than masking it and perhaps even spoiling it. This is why should choose the type of oil, vinegar and seasonings judiciously when making your own dressing.

A basic oil and vinegar recipe calls for 3 parts oil to 1 part vinegar, which is then seasoned with salt and freshly ground pepper. This is where many different condiments can be added to the original mix: for instance, Dijon mustard adds flavour and a creamy texture to your dressing while honey and maple syrup will impart sweetness. Lemon juice may also be substituted for vinegar and, when planning a cheese dressing, fresh cream or yogurt can replace oil.

The possibilities are endless, but remember the final choice is yours!
